My fruit mince pies are spicy, rich and full of brandy. The pastry is golden and crisp, and oh so short. It melts in the mouth.
Homemade fruit mince pies are so very delicious, Nigel Slater would approve.
This homemade fruit mince is so easy to make. The benefit of making it yourself is you can tailor it to your tastes. Use whatever fruit, spice and booze you like.
This is my recipe for Baklava Vanilla Slice, published by SBS Food.
Picture creamy vanilla custard scented with cardamom, and encased in crunchy pastry studded with caramelised pistachio.
Brunsviger is an airy, buttery brioche dough shaped in a rectangular pan. Before it is baked, it is dimpled the same way as focaccia and coated in a spiced caramel – known in Denmark as ‘remonce’. This gives the cake a wonderful gooey top, while retaining a fluffy base. The dimples fill with caramel, so there are wonderful, oozy pops of sweet and spice with every bite.
These are my signature Lemon Palet Breton. I baked them during 'Citrus Week' on on the FOXTEL show, The Great Australian Bake Off. Thank you so much for your interest in this recipe!
